I recently spent two weeks in Italy and was inspired by the rustic nature and simplicity of the dishes I ate. I can’t think of anything more classic Italian than the fresh flavors of tomato, basil and mozzarella. This Caprese Stuffed chicken breast is a simple way to add flavor and color to the ever popular chicken breast!
678g Boneless Skinless Chicken Breast (6) 113g portions
6 Tbsp. Light Balsamic Dressing (such as Newman’s Own)
168g Mozzarella ((6) 23g portions – sliced works best for this recipe)
180g Sliced Tomato (6) 30g portions
30 Fresh Basil Leaves
2 Tbsp. Italian Seasoning
Salt & Pepper
Preheat oven to 350 degrees.
Place Chicken Breast portions in Ziploc bag and pound until thin (1/2″)
Coat each Chicken Breast with 1Tbsp. Light Balsamic Dressing
With each Chicken Breast flat, season with Salt, Pepper and Italian Seasoning, layer Tomato portion, topped with Mozzarella portion and 5 Basil leaves
Fold each Chicken Breast in half securing with 2 toothpicks.
Place chicken on baking sheet (line with foil and coat with non-stick spray for easy clean up) and bake for 25 minutes or until fully cooked through.
*For even more flavor, start the cooking process on the grill – about 5 minutes per side and then finish in the oven for 15 minutes.
