*Mid Week Recipe*


This is a SUPER SWEET cheat…
SWEET POTATO BROWNIES
Ingredients:
 
– 2 large sweet potatoes, skin removed
-1/2 cup quinoa flour or oat flour
-1 zucchini, grated
-1/2 cup cocoa powder
-1-1/2 tsp baking powder
-2 eggs
-3 egg whites
-1/3 cup raw organic honey
Directions:
 
-Preheat oven to 415F
-Bake potatoes for approx. one hour, or until they’re soft. Allow to cool to room temperature.
-Preheat oven to 350F
-Mash sweet potatoes into a large mixing bowl. Add all remaining ingredients and mix thoroughly.
-Evenly divide batter into a muffin pan. Bake for 30 minutes, or until a toothpick inserted into brownies comes out clean.
