Grilled Chicken Salad with Apple & Pecan


One of the items I usually have on hand is boneless, skinless chicken breast.  I like to grill large batches and then use them in different and creative ways throughout the week.  When I grill them, I usually use Seasoned Salt which adds great flavor, without adding any calories.  This Grilled Chicken Salad with Apple & Pecan is a refreshing dish that is full of flavor and easy to assemble with ingredients you probably have in your fridge & pantry today!

Grilled Chicken Salad with Apple & Pecan
 
Ingredients
  • 510g Grilled Chicken Breast (cooked & diced)
  • 200g Celery (small dice)
  • 200g Apple (small dice)
  • 56g Pecans (chopped)
  • 45g Light Mayo (like Hellman's)
  • 50g 0% Fat Plain Greek Yogurt
  • Salt & Pepper to taste
Instructions
  1. Start by adding the Light Mayo & FF Plain Greek Yogurt to a large bowl. Add in remaining ingredients and fold to combine, making sure everything is fully incorporated. This Grilled Chicken Salad with Apple & Pecan can be served on a roll, in a wrap, on top of a salad and it's even great 'as is' - ENJOY!
