Greek Turkey Burgers with Tzatziki


Imagine your favorite Greek Chicken Souvlaki flavors all wrapped up into one protein packed burger!  This burger is loaded with spinach, roasted red peppers, feta and spices.  You can feel free to enjoy these alone, in a pita or even on top of a green salad.  Make a batch for dinner one night and use the leftovers for lunch during the week!

Greek Turkey Burgers
 
Ingredients
  • 32oz 94/6 Lean Ground Turkey
  • 1 large egg (whisked)
  • 50g Baby Spinach, rough chopped
  • 50g Red Onion, diced
  • 150g Roasted Red Peppers, diced
  • 100g Traditional Crumbled Feta
  • 2 tbsp. Garlic Powder
  • 1 tsp. Dried Oregano
  • Salt & Pepper to taste
  • Non-Stick Spray
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl, mix all ingredients ensuring they are all evenly distributed. Portion into 12 patties (approx. 110g pre-cooked) and place them on a non-stick coated baking sheet. Bake in oven for 8-10 minutes per side. (For additional flavor and color, bake for only 6 minutes per side and finish cooking on the grill 3-4 minutes per side).

Tzatziki
 
Ingredients
  • 220g Light Sour Cream (small container)
  • 70g Cucumbers (peeled and very small diced)
  • 2 Cloves of Garlic
  • 1 tbsp. Dill Weed, Dried
  • 2 tbsp. Fresh Squeezed Lemon Juice
  • Zest of 1 lemon
  • Salt & Pepper to taste
Instructions
  1. In a medium sized bowl, add all ingredients and mix completely. That's it! You can enjoy right away, but it's even better if it has a chance to chill in the fridge for a few hours.
