Cuban Pork


If you like burrito bowls, you will love this Cuban Style Pork Recipe. Growing up in a Cuban & Italian household we often ate dishes like Arroz con Pollo (Chicken and Rice), Arroz con Frijoles Negros (Black Beans and Rice) and of course – pork.  This lightened up recipe uses pork loin instead of pork shoulder and is loaded with the fresh flavors you would expect from a Cuban Style Pork dish. 

Cuban Pork
 
Ingredients
  • 832g Pork Loin (raw weight)
  • 1 tbsp. Seasoned Salt
  • 1 tsp. Dried Oregano
  • 1 tsp. Ground Cumin
  • 1 tsp. Smoked Paprika
  • 2 Bay Leaves
  • 50g Jalapeno (halved)
  • 55g Onion (chopped)
  • 30g Garlic Cloves
  • ¼ cup Lemon Juice
  • ¼ cup Lime Juice
  • ¾ cup Fat Free Chicken Broth
  • *Crockpot
Instructions
  1. Start by combining first 4 spices together in a small bowl to create a dry rub. Coat pork loin in dry rub and refrigerate at least 4 hours, or overnight.
  2. In crockpot, add onion first, then place pork loin on top of onion. Add in remaining ingredients and cook on low for 6-8 hours until pork is tender. Using 2 forks, pull the pork loin to get shredded pork, returning to crockpot liquid to help retain moisture. This pork is awesome in a burrito bowl, in a wrap, on a salad…you name it! Enjoy!
